This is a recipe of my husband’s who is the main cook in the house. I am so pea-green with envy of that salmon fishing opportunity! Hope you bag some good ones!
Ginger-Glazed Salmon
Cooking spray
1 tablespoon dark brown sugar
1 teaspoon Dijon mustard
1 teaspoon soy sauce
1 tablespoons grated ginger root.
4 salmon fillets, 1/2 inch thick; about 1 1/2 lbs total (ask fish department to remove skin)
Prep: 2 minutes
Cook: 5 minutes
1. Preheat broiler to high. Coat a broiler proof pan with cooking spray (or line with a piece of foil).
2. Mix sugar, mustard, soy sauce, and ginger in small bowl. Make shallow cuts diagonally across salmon fillets (this lets the sugar mixture flavor the salmon
3. Brush salmon with brown-sugar mixture. Broil 6 inches from heat for 5 minutes, or until fish flakes easily with a fork.
Chip and Denise have been catching fish right and left in the river behind the house. They are pink salmon (I think) (AKA humpys). Very tasty and we have also smoked a bunch of them. Yum Yum.
Syd… I love the fishing part, being out on the river. Don’t much like the eating of the fish.
Strange, but true. Sounds like Chip and Denise are having a ball though. What fun!
